Short answer, no. You need sensors that "see" the things you want to analyse. However, it might be possible to "infer" properties under ground based on what is found on top.

This makes sense according to the NDVI value range, but I have tried changin this to extreme off-set levels (-8 to +8). Running af raster statistics analysis shows exactly the same values (mean, range etc). Am I doing something wrong or why is this?
The source described in the video does have world coverage. If you want higher resolution, there's a lot of commercial companies that sell imagery. Try "Planet" for really up to date imagery.

It only influence the visual style. Not analysis values.
