  • Rosquillos is a cookie/pastry which is very distinctly Cebuano in origin. It is a round crisp cookie with a hole in the middle. My version of the famous rosquillos is very easy to make. If you do not have a rosquillos cutter, you can use a round corrugated cutter and then use another plain round cutter to punch the hole in the middle. If you do not have the cutters that I mentioned, any cutter will do, it will still taste like rosquillos. Enjoy these cookies of our childhood in the comforts of your own kitchen.
    Chef's Notes:
    1.) Roll out the dough thinly (about 1/16") so your rosquillos are crispier. Do not forget to use pastry rulers to ensure that you have uniform thickness of your dough all throughout.
    2.) Press together the dough scraps and allow to rest for 15 minutes before rolling them out again.
    3.) Dust table with flour only as needed.
    4.) Line the baking pan with parchment paper or greaseproof paper instead of greasing the baking pan. This way, you have lesser breakage when the cookies are done.

    Chef's Notes:

      @@cherryreyes2466 You can rest the dough at room temperature for as long as 8 hours.

    Chef, is it necessary to put yeast in this recipe? What does it do to the cookie? There is already baking powder and baking soda in it.

      Yes you need to add yeast. This how rosquillos is formulated to get that particular crunch and volume.

    Where do you buy the rosquillos cutter? Do these rosquillos taste like Titay’s?

      We sell the cutter here in our store in Cebu. Do they taste like Titay's? I don't know because taste is subjective and here in Cebu many bakeries make rosquillos. I can say for sure that my version is definitely rosquillos and tastes like one. Enjoy!

    Hi can I also just kneed the dough? It may take longer ofcourse? And do I kneed it until it no longer sticks to the counter? 1/4 all purpose flower is it 250 grams?

      1/4 kilo all purpose flour is 250 grams.
      No need to knead the dough. Just mix and rest the dough before rolling out and cutting.
      Add extra flour as necessary when you start rolling them out after resting.

      Your rosquillos will be too hard if you use 1st class flour. Use all purpose flour instead if you do not have 3rd class flour. Thank you for watching.
