I think the oil is key to getting grill marks. I've been making steaks out of pieces of pork shoulder cuts. Salt it and rub it. The first time I didn't use any kind of oil. The grill marks came out a light dusty brown. The second time I first warmed a pan with coconut oil, then put the steak into the oil, flipping to get both sides. Then I put it into the Kalorik for grilling. Got dark grill marks the second time, and much better melting of the fat in the meat. Oil on the surface seems key to heat conduction.
I also believe the oil is necessary although I just use a light mist from a mist spray bottle and it works great. Glad that you got it figured out and working to your satisfaction.

Yes they're definitely are some differences. The original version doesn't have the ability to grill. Also some of the times and temperatures have been updated on the Grill version.
Question: I notice a lot of these reviews show where you (or others) wrapped the drip pan in foil. The book states do not use foil inside. I’m confused.
I do not recommend wrapping the crumb tray and loyal however it could be used on the drip pans so long as it is weighted down. From what I remember the book says not to cover the oven with foil but not really mentioning the parts. I don't have it in front of me anymore but I know you definitely don't want to wrap the crumb tray.
I haven't used the grill grate yet. I'm wondering what kind of mess was on the crumb tray and was there any grease in the grease tray after you made that great steak. Thanks.
They're definitely is a bit of a mess on the crumb tray but for me it wiped up easily. Just waited for it to cool down enough to the touch and then washed it in the sink with the scrubber side of a sponge. Thank you so much for the kind words and for tuning in.

Thank you so much! Yes, the four heating elements on the bottom are responsible for heating the grill grate. The grill grate sits directly on top of those elements in addition to sitting on top of a temperature probe. I have the original version of the Maxx also and it did really well for steaks too. I do like this new one a bit more though.
When using the Maxx Grill there is definitely some smoke just like there would be if you were to use a barbecue. That is perfectly normal. Make sure that there is plenty of breathing room all around the device. It needs to have at least 4 inches of clearance on the sides, back and top of the oven. I don't recommend using it inside of a pantry. It should have fresh air access as it does need to ventilate during use.

@@edgewin1 I usually use peanut oil because it can handle the 500 degree heat without breaking down. Any high heat oil should work fine though.

My oven got very smoky and set off alarm on our smoke detectors. My Kalorik is in the pantry under a cabinet.. About 5" below bottom of cabinet
