Thank you for such a detailed video that too when u r showing street food.
You can replace the food colour by using Kashmiri red chilly powder or deggi mirch which are milder in heat but richer in and color. PS. Any kind of authentic Schezwan recipies will use Schezwan pepper even if its Indo-Chinese food.

Bcoz we indian judge food by its appearance not by taste and ingredients
u can take whole kasmiri chilli and soak in hot water then make paste of it n use instead of food colour thats how Schezwan sauce works....
Schezwan pepper is not easily available in many parts of India plus it is expensive so do you think the street food vendors who are getting a small earning could afford that..
