What do you use to print your photos?
I typically use a canon SELPHY that prints 4x6. But I often create photo collages on an app called PicStitch beforehand so I can get smaller photos more easily.

It’s not too late! Maybe break up your trip into days and work on it slowly so it is more manageable? I bet reliving the wonderful memories will be as fun as traveling again!
