  • This pot pie is a delicious way we enjoy turkey leftovers any time of year using turkey or chicken.
    Chicken or Turkey Pot Pie

    Bring out of frig 15 - 20 minutes before using, 2 prepared pie crusts
    Preheat oven to 350 degrees F
    Sauté in large fry pan until translation
    2 Tablespoons olive oil
    1 small onion chopped
    Add to fry pan and stir until warm
    1 8oz. bag frozen mixed vegetables
    In a small bowl mix together
    3 Tablespoons all-purpose flour
    1 c broth
    ¾ c milk or almond milk
    Add broth mixture to fry pan, stir to veggie & onions & heat until thick and bubbly
    1 teaspoon minced garlic
    2 1/2 - 3 cups cooked turkey (or chicken) cut into bit sized pieces
    1 to taste salt and pepper to taste
    Fit pie crust into 9 inch deep dish pie plate, fill with chicken mixture and cover with pie shell. Crimp edges and bake for 45 minutes or until golden brown.

    With scraps of pie crust left after making meat pie, you can make sugar pie (butter pie crust, sprinkle with cinnamon sugar) Bake 15 minutes or until golden brown.
    (If you don't want to use onions you can use 2 tsp garlic and a sprinkle of cumin to season instead.)
