HI Love you work. Thanx for sharing. What program do you use to shoot and view on your computer? I shoot with Canon on a PC, what would you suggest for me to use? Thank you.
I use Dragonframe software on a mac, using a canon. It does not matter pc or mac, but that software or stop motion studio (cheaper) helps a lot.
Is all stop motion straight ahead or can stop motion pose to pose be achieved?
It is mostly straight ahead, but you could add some inbetweens if needed. Not easy though, and not common

It deppends on the thing you want to make, for postproduction after effects, for editing premiere...

There is not only one answer. Each one I know comes from different places. 2d, product design, cinema, photo.... But at the end you have to be great at animation. If you can get a master in stopmotion animation.
I teach in one year course in Barcelona, there are options in UK as well.
