    YES IMMY, IT HAPPENS TO ME THAT I CANT DECIDE WHAT TO EAT WHEN I HAVE MEAL PREPS OR FOOD IN THE FREZZER THAT I NEED TO EAT , sometimes they end up limiting my cravings of certain foods..
    This is why i ADORE you, because you are soo so honest and share all of your thoughts!! Thanks for the foodiie ideas!

    Pumpkin puree quickly turns into a pumpkin soup. Just add some onion, garlic, curry powder. Top with toasted pumpkin seeds. Great video!

      I used to really like making a soup with canned pumpkin puree and red lentils. It just occurred to me that you could probably use the yellow split peas instead of red lentils

      It’s extra yummy with some full fat coconut milk stirred in! I cooked up 3 massive pumpkins this year that I got on clearance the day after Halloween and have so much in the freezer.

    In the last years I developed the habit of cleaning my pantry every 2-3 months (because of problems with bugs in the past). While I do it, I check the expiration date on every product and make a "use it or loose it" list of the things that I have to use within a month or two. Sometimes I put in a visible place the things I need to use up within a few days so I don't forget them.
    When I have to go to the supermarket I can make a list of the things I need very quickly just watching my pantry, because It is always well organized and I can easily see if some of my staple foods are low or missing.
    This takes me just an hour every 2-3 months and 5 minutes to check before going shopping and it helped me a lot to reduce food waste.
    You are doing a great job with your yearly challenges of this 2025! I wish you a great year!

    Immy you have the sweetest voice. I’m excited to hear you’re bringing back your curls. My straight hair also suffers greatly in Colorado. Haven’t figured out a fix.
    I’m sorry if I’ve missed this, have you ever gotten into bullet journaling? I feel like your habit stacking, meal prep, general organization, desire for hobbies, etc would take well to a bullet journal.

    oh Immy, when you said that you feel tired at around 3pm and don't wanne do anything since you have just an hour of light left... that exactly is me !! :D i can relate 100% and im glad im not alone :) funny enough that it is close to 4pm here in Germany and i am slowly preparing myself to lay down.

    Pumpkin puree as sauce for shells
    Do a tofu ricotta stuffed shell with a pumpkin puree sauce (sage garlic onion) it’s magical

    Whenever I have leftover pumpkin puree, I make it into a delicious dal with red lentils, onions, my favorite Thai red curry paste, coconut milk, water, and veggie bouillon (sometimes canned pineapple chunks as well if you're into that). The pumpkin makes the dal so velvety and creamy, and it's unbelievably yummy! Plus they're items I always have in my pantry.

    It’s taken a bit of practice but now it’s second nature to plan my grocery shopping around things I have left over from the previous week. As I never seem to eat all of the food I buy for the week. 😑 but it’s really nice to follow along with someone who’s doing a no buy as well and trying to be very intentional about other aspects of saving money. Well done!

    For the yellow split peas you could make a yummy carrot and yellow split pea soup with Middle Eastern spices. So yummy.

    For protein powder! My husband an I LOVE the brand Naked Pea. Their chocolate is so yummy! But also love some of the vanilla in my oats. We find the best price is Amazon in the 5lb tub

    Hey Immy, I'm really enjoying the videos you've put out so far this year! I'm trying to sort out finances, get into an exercise regime and try new hobbies in 2025 so your content is very inspiring!
    I don't have curly hair so can't vouch for this buuut if you have excess ground flaxseed you could turn it into a gel with hot water to make a hydrating hair treatment! I tried it once with some out of date flaxseeds on my very straight hair and it made it shiny!

    These videos have been so helpful and nice to watch! I'm due to give birth in two months and my husband and I are going through our freezer and pantry to eat up what's left, so that I can create some freezer meals for postpartum. Totally relate to the "I don't want to eat this, but I want to not waste it more than I want to eat it" 😂

    Pumpkin puree is great for pumpkin bread :) Or a curry with red lentils and pumpkin...turns out a bit like a dahl.

    I finally tried the RPL Noodle salad and haven't put the peanut sauce on. Still so good! Thanks for also being real when you just don't want to cook and when things were forgotten. I don't have as large of a inventory as I use to from moving but budget is tight. Also missing more veggie variety!
    Also use pumpkin to thicken sauces and pumpkin pasta is delish.

    Hi Immy! Thank you for another video ☺ I saw you struggling with the protein powder! I make a protein smoothie every morning using a frozen banana, 1 cup soy milk, 30 grams pea protein, Himalayan salt, and cinnamon and I think it’s delicious! The other ingredients help cover up the taste and texture of the protein powder.

    I'm always testing recipes for pumpkin purée ! I mostly use it in sweet recipes (Mina Rome has a great vegan pumpkin brownie recipe), but when I want something savoury I will make a big batch of pumpkin gnocchi, boil them and freeze. With sage butter or mushroom and onions, it's great ! You could also make a pumpkin bread, waffles or pancakes, maybe a pumpkin risotto, use it in a cheesy sauce for pasta with sage, or make some cookies ! Endless ideas to use especially in winter !

    I love to eat the pick at it dinner. I prep celery and carrots into sticks so I can dip them into things or chop them or just to "start " the eating process without too much thought.

    We put the vegan protein powder into fruit smoothies in the morning. Per person: half a banana (or whatever fruit you want), a couple of rounds of a raw courgette or a handful of spinach, a tbsp of peanut butter, a scoop of protein powder, and some water. It masks the taste of the powder and is quite filling + you get a serving of veggies first thing in the morning. I'm really enjoying your videos!

    What about using the szechuan peppercorns to make some pickles/fermented foods? I have seen videos about Chinese pickles and they always seem to be a key ingredient :)

    Immy, why don't you try protein powder with milk. I make my protein drink with soy milk, tastes much better than with water IMHO and boosts protein:)
    I my opinion all protein powders taste awful with water!

    I am 100% also the same way @1153 I'm legit eating split pea soup for breakfast at 12pm because it FELL out of the freezer on my 4th trip there to see if i could be asses to make breakfast and the container broke. That's how indecisive I was. Bonus: i now know that I can throw a frozen block of freezer burnt soup in the instant pot with extra water and it will rehydrate well enough to not taste funky 😅

    Definitely have some plant milk with your protein to make it more creamy. Even whey protein is ass without some milk. It just needs something to smooth it out
