  • In this week's episode, Mark, having survived the wrath of his wife, has decided to use the honey from the fish tank hive to make a batch of mead. Trying to be a lazy Viking, he throws this tiny batch of mead together.

    The lemon will lower the pH, making it better for your yeast since they'll have less competitors for the sugars from the honey.
    Also, cinnamon is tree bark. How'd they figure that one out?

    Funny story about meed my mate was making mead in his dorm room at uni. Anyway he forgot about it and it exploded sticky alcohol liquid everywhere in his bedroom. It still smells like honey and beer

    Cinnamon is a piece of bark. And the word you were looking for at the beginning is "fermentation", which is one of my favorite words, because it makes alcohol! :)

      I just cringed when you threw in a handful of cloves! I use one whole clove in a gallon on mead. I'm afraid your mead will taste like clove and everything else will be buried.
      But, hey! It's your brew. You do you!

      God I can't stand cinnamon ,I tried apple juice and cinnamon with moonshine like the Americans do and it was horrible

      @@davidwren1879 Defiantly depends if its real(ceylon) cinnamon cinnnamomum verum thats a more warm fruity note, vs the exceptionally more common and almost fiery spice of Cinnamomum cassia

    We had one of our members come to the meeting and showed us how to make mead and she also gave us a try. She has won multiple prises at The Royal Easter Show. I'm not a drinker and I'm sorry to say I didn't like it at all but a lot of male members loved it. A few of them have tried making mead and she was kind enough to help them with their questions. Thanks Mark and John great video as usual

    Cheating and double checking on google makes me think that cinnamon you got is pieces of the bark "Cinnamon is a spice, sprinkled on toast and lattes. But extracts from the bark as well as leaves, flowers, fruits, and roots of the cinnamon tree have also been used in traditional medicine around the world for thousands of years. It's used in cooking and baking, and added to many foods".

    You forgot to add a generous fist full of (sulphur free) dried grapes, raisins, sultanas or the like, they have natural yeast on the skins and they provide food for the yeast which finds honey a little hard going.

    Acid is required for the propagation of the yeast. Citric acid(lemon juice ) is a great source.

    Yeast likes low PH so I'd put the lemon in. We used to when we made gingerbeer back in the day.

    I've been wanting to make some Mead with the left over cappings I have but don't know where to start, they are in the freezer at the moment waiting patiently for me to hurry up. Which mead site are you on so I can hopefully get a simple recipe to get a wiggle on? Can't wait for your end results, I do have to say though,... that's a lot of ginger you put in there, I hope it doesn't over power everything else, we'll have to wait and see.

      Try pickling strawberries in moonshine. Far better.

      @@chasingthefish9042👍 I do a rum pots ,all the different berries I can find ,a table spoon brown sugar and rum up to the top so there's no air left in jar and leave sit for 6 weeks ,if it doesn't explode , berries are awesome with ice cream .and the juice goes down well with coke...will have to try it with moonshine next season

    Don't use a whole thing of turbo yeast , it will make it too yeasty 🤔but then again you might have killed it with the cinnamon and stuff.

      Cinnamon doesn’t kill the yeast, the yeast actually ferments more after you add cinnamon my guess is it has small amounts of sugar in it. This is just what I’ve personally seen making cinnamon mead

      @@Slinkeymac thanks,I'm just not a big fan of cinnamon I usually add some home made preserving to any sugar washes to damper that yeast taste , and I've kinda learned when doing a small mash like he's doing you don't need the whole thing of turbo yeast and it's almost better if you don't use the whole thing flavors wise

    Where is the sanitizer???? This is all good and great but not using food grade sanitizer is the prime sin of fermenting!

    I had to watch this, my most favorite memories are of the last mead making videos way back in the day, they were hilarious. Mark go all Viking, It is still (no pun intended LMAO) the best set of videos of yours I have watched for pure entertainment. Never sure if you crew read these comments, but I weirdly enough have a degree in some of this shenanigans. So you were asking for a "Tip". I always "activate" my yeast before pitching it. Basically, you take a small volume say 100mls of honey and water and add your packet yeast a few hours before to a sealed container like a jar of 500mls. This allows the yeast to grow and multiply and be actively growing before you drop it into the brew. . When you add "pitch" the yeast into the fermentation tank, the yeast will already be in a rapidly growing phase and will out grow any other possible contaminants eg bacteria and other things that will ruin your brew. Winning! Other wise, stay safe, always value your testicles and wipe off any traces of your crimes around the home! 👌🦘👍💖
