  • It's just amazing what Xabi and his family have been doing since 1951 on their tiny grill at Casa Julian restaurant in Tolosa near San Sebastian in Spain.
    Their steaks are without a doubt the best in flavor and texture Ive ever tasted in all my travels around the world.

    I know it’s trendy or popular or whatever you want to say but I couldn’t eat that steak it’s raw meat to me …. I would be the unfashionable one who wants it cooked through …, but food should be enjoyed so it shouldn’t be wrong to like it cooked so that blood isn’t running out …

      I mean, it depends on your tastes. Here in the Basque Country where do I live, we make our Txuleton the way you see in the video, normally people eat the meat like that because for us is the best way, you throw the steak into the grill which we call it "brasas", and you caramelized the exterior zone leaving the interior raw, doing this you maintain the richness and the flavor of the steak, which have been maturating over 24 days. The red thing that you see running out the steak it's not blood, it's myoglobin, which is a protein of the muscle. I'm not trying to make you want to start eating your meat like that, but I want you to understand that this is not a trend or a popular thing, this is the traditional way to make this special kind of steak which is "rubia gallega". I hope one day you could try this kind of meat here in the Basque Country. Best regards.

      I went to that place and they literally get so offended if you don’t get the steak the way they like it, basically raw
