Hey Greg, It’s a good question, I’m glad you asked it. The smaller coves I did in the demo could be done with a router however, this method can cut a variety of different size coves. For example, you could cut a 3” long by 5/8” deep cove. A router bit that size is probably out there but would be very expensive. There’s also another level to cove cutting that’s combined with a template. This method is much more complex but can create a range of tapered coves/inverse taper coves and partial coves that can’t be achieved easily with a standard router bit.
