Decades ago I was in love with the cookbooks in a local bookstore. When I discovered a few cheesecake cookbooks I was obsessed with making cheesecakes frequently. I had no idea before then that there were so many ways to make cheesecakes. Cheesecakes are wonderful. So glad to see it enjoyed thoroughly. If I were there that slice would disappear quickly.
New York style cheesecake is a classic. Japanese style cheesecake is also tasty and lighter, plus it jiggles. Both of those styles are baked. My favorite is a no-bake cheesecake. It has no eggs and is only mixed thoroughly and chilled in its pre-baked cookie crust to set it. For this recipe you need two 8-ounce blocks of cream cheese, 1/2 cup sugar, 3/4 cup sour cream or very thick plain yogurt (Greek style is great) and 1 teaspoon of vanilla. It's whipped in a bowl and poured into the crust. Chill it for about 4 hours to set it and you have a great dessert to eat plain or top with fruit. The vanilla can be changed out with another flavoring. I've used lemon, almond, and once made a Mediterranean-style cheesecake with rose and orange flower water and the crust was shredded sweetened Filo dough (baked before filling, of course). I then topped it with chopped pistachios. The almond flavored one is great with cherries in sauce. The lemon flavored one I spread lemon curd on top. Another time I used chopped pecans in the crust and topped the cheesecake with a mix of pecans and caramel. A chocolate one could be made with a chocolate cookie crust and mini chocolate chips mixed in. The possibilities are only limited by your imagination.
There is a cheesecake shop close to where I live with an incredible variety of flavours available every day. It's the only dessert I eat and can't go without.
I'm with Aunty. When I was a teen and asked what type of cake on my birthday I always said "cheese cake cheese cake". It annoyed my parents as, well, they expected me to ask for a flour based cake you can easily grab. So not traditional in America for birthdays... but what's what I want too.
Your comment reminded me of the time my dad and I made a chocolate swirl cheesecake, great memory. The only thing I recall us working together to make, though he did eat a lot of scrambled egg sandwiches as it was the first thing I learned to cook 😂. Been 22 years since his passing. Peace. 💐

One of my favorite foods! Great by itself or with a nice fruit or chocolate syrup. Caramel is also a great topping. Can't really go wrong either way.
