Those shanks were not "seared" at all, boiled more like, you should sear them in nothing but hot oil or fat first, then remove them and THEN add your veg base and all your other liquids/solids and herbs/spices and once all done THEN add your meat back in....
Oh my, that's no "big" deal and considering boiling them first brings all the scum and froth out. Then I would sear them but this is not a bad recipe short at all - veal shanks are what I use.
the only difference ill do is searing before adding the aromatics (that was a weak sear). add veggies after removing meat, then deglaze and return the meat and simmer for 3-4 hrs
Anyone making this, always put your garlic in after you’re ready to turn the heat down low. You don’t want it to become blackened, it gets bitter and actually doesn’t have the best garlic flavour possible
