You need to soak your casings and water so they're pliable before you stuff them. And you need to run the casing to the end of the stuffer tip so you can pack the casing tight so you do not get air bubbles or grease bubbles in your sausage.

Drop food to be cooled in an ice bath in an oven bag to keep moisture out. My daughter loves to make jerky. Her unit can add additional trays. They stack up. Her unit was from Amazon. Rotate the trays every hour.

#1 summer sausage seasoning is cabela's jalapeno kit. You also should add a binder to your mixture such as non fat powdered milk or encapsulated citric acid. As far as other seasonings to try, check out walton's seasonings!
Slide that casing all the way onto the spout before you start stuffing like you’re rolling up a tube sock. It’ll fill that casing way better and be less crumbly
1) freeze for 30-45 minutes before or Atleast add ice when grinding any meat 2) when making sausage add water and mix until it becomes tacky and sticks to your glove/hand You’ll have so much better results even if you’re happy with how it turns out
Helpful tip, put your grinder attachments in the freezer overnight before using it, and throw the meat in the freezer for a little bit too not enough to freeze it but just firm it up a little before grinding, it’ll come out better.
Andrew! The jerky crank is fine. Looks like your missing the rakes that go on the sides. My electric one does the same if I forget to put them back in.

When I make duck jerky I put it in my 4 shelf dehydrator and rotate the shelves every 1.25 hours for a total of 5 hours. I have found that at 160 which is max heat I get the best jerky in 5 hours. I also mix venison with the ducks and it is great!
I can't believe how much Lucy has to almost perfect at retrieving the game for you guys!!! Try giving her treats after every bird she brings back each time so she realizes what she is being rewarded for especially in the freezing temps!!!
You guys gotta use the Hi Mountain jerky seasonings, I make a ton of deer and goose jerky and everyone who eats it loves it. Ratios from directions are great. I personally mainly use the mesquite blend, and I use a jerky gun. Good work fellas
Worked at a little custom butcher shop you brought in your cow or what ever we killes and process it did alot of deer a few moose and elk but when slicing meat we work put in freezer for 15 20 min to stiffen it up and it would slice a lot better. Maybe your slicer would work better with meat being stiff. Just a thought
Double the jerky seasoning! Do the regular amount let it sit overnight in the Fridge. Then add the same amount just prior to putting it in the dehydrator apply it in a salt & pepper type shaker. Thank me later! Love the Videos! Good Luck!

Put your jerky in a Ziploc bag with a few slices of bread and the jerky will draw the moisture out of the bread and make it more tender, then use the bread to make a breakfast sandwich and 🥰🥰🥰🥰

Hey flair my tip for jerky I always add an extra scoop of seasoning to my jerky they always say less than I think there should be. Also love your videos your the reason I started waterfowl and now I’m hooked thank you
Rule#1 with jerky or crab boil seasoning is always add extra seasoning lol try adding some honey, liquid smoke, Worcester sauce, cracked pepper to your store bought seasonings.
I feel like we are watching the test kitchen videos for Bux/Dux line of summer sausage and jerky line of products lol. Bux/Dux jerky seasoning and sausage seasoning. Try adding crushed red pepper flakes. Heat without the mesquite flavor.
Cube your meat, freeze it for a while, mix your seasoning with the chunks, then grind it. You’ll get a much better blend of the seasoning in the meat. Also, feed the “sack” all the way on the tube and let it push out as it fills.

i’ve used these exact mixes and the cheap dehydrater on goose, and mesquite with cracked pepper is the way to go.

Another idea for the dehydrator, i rotate trays and flip the meat every 1.5-2 hours. Keeps the cook more even.

You should try taking the handle off that meat strip cutter and attaching a drill to it. It might spin the blades faster to cut the jerky better

When you are making any type of sausage thread the casing onto the spout and let the meat push it out it will be stuffed better and more evenly

To make good jerky you have to rotate the dehydrator trays (top to bottom) every hour

Easiest way to season a big batch of meat ND have no dry spot dissolve the seasoning in some warm water ND pour in then mix until water is gone!
