    Butternut squash is such a pain to peel and cut. You can definitely see even Kenji struggles with it (assuming that's the person in the video). I'm way happier just roasting it with the skin on then peeling off the skin after the squash is nice and soft.

      @dtape I was thinking the same thing when watching this video. If I ever need diced, I'll cut the outside with a knife (even though there's a little more waste).

    You may find it much easier to peel by leaving the whole thing intact. Place at the edge of the counter so when peeling you don't thump your knuckles with each stroke, make one long pass, with a peeler like yours, from top to bottom. I can't get the peels to hit the trash can but they are easy to pick up. Very easy to peel this way. Thanks for the video on best way to cut it up.

    How do you make it look so easy. It was extremely hard to cut butternut squash to me. I was working with a brand new peeler and a brand new knife so they are not dull

    Toss squash in microwave for a minute or so to make it easier to peel. Cut off top and bottom for an even base. Peel. Then cut and scoop seeds. I'm kinda surprised they didn't do it that way.

    For getting out the seeds, I've found an ice cream scoop works much better than a mere spoon. Also, I cut it in quarters so I don't have to go digging so deep.

      @@ItsAllBeenDecided i always leave the skin on a butternut squash when i just make soup, its delicious (it ll be blended anyways). If i make purree out of it i cut it in half, unseed it and put it face down in the baking oven for 30 min or so. It ll be all soft and easy to just scoop out then :)

      @@ItsAllBeenDecided This is really interesting to me. I always leave the skin on with Butternut and Red Kuri squash, and haven't noticed any negative effects on texture in either pureed soups or baked. Then again, I have never tried peeling it, so I might next season! Thanks, greets

    Too much work, really When I prep Butternut squash for soup, I roast it…remove the top stem and then slice in half lengthwise. Next scoop out the seeds, and place in a long roasting dish, cut side face down. Depending how much water is in the squash, add about a half a cup of water…it helps steam and cook the squash. Place in an oven pre-heated to 375 degrees, Fahrenheit, 190 degrees Celsius. During cooking, always maintain a small amount of water in the pan so the squash sugars don’t turn brown. Sometimes you will need to add water, but many times the squash will throw out excess water…Cook for about 45 minutes or until a fork easily pierces the outer skin of the squash. Reserve all liquids and add to your soup. When the squash is cool enough to handle scoop out the insides to use in your soup recipe and discard the skins. Because the sugars have not been diluted by cooking water, you soup will be deliciously sweet. A nice touch when making butternut squash or even pumpkin soup is to throw in a handful of spinach greens at the end to boost nutrition and to give a color splash.
