Hi, it's a good question. The Callebaut Callets are already pre-crystalised which means they're affectively already tempered. By following the simple heating method in the video the couverture is tempered. For a better understanding of why I use the 50/50 method check out my videos on 'how to melt chocolate' and '5 most common mistakes'. Also my ebook covers this in detail which you can get at pipeitshop.com
If using callebaut callets you wont need to because the cocoa butter will give you good fluidity. But otherwise if using compounds like melts, yes coconut oil is good, or paramount crystals.

What do you put it in after you’re done? How do you wrap it?

You could wrap this loosely with clear cello and bundle at the top.
With the sparkles. Do you tap of excess or leave as is?
And do you put the excess back in the bag to save waste
