    Vegetable kolhapuri is a dish from the city of Kolhapur in Maharashtra, India consisting of mixed vegetables in a thick & spicy gravy. It is served as a main course accompanied by Indian breads such as tandoori rotis, naan, kulchas, puri, chapatis.
    Written recipe for Veg Kolhapuri :-
    Prep time: 15 mins
    Cooking time: 30 mins
    Serves: 5-6
    Ingredients :
    • Oil : 2 tbsp
    • Raw Potato : 2 medium size (diced)
    • Cauliflower : ½ cup
    • French beans : ½ cup
    • Capsicum : ½ cup (diced)
    • Carrots : ½ cup (diced)
    • Green peas : ½ cup
    • Ivy gourd : ½ cup (optional)
    For Gravy :-
    • Oil : 2 tbsp
    • Onions : 2 medium size (sliced)
    • Ginger : 1 inch (chopped)
    • Cashew nuts : 7-8 nos.
    • Tomato : 4-5 medium size (diced)
    • Salt : to taste
    • Kashmiri red chillies : 2-3 nos.
    • Garlic : 4-5 cloves
    • Cumin seeds (jeera) : 1 tsp
    • Bay leaf : 1-2 nos.
    • Green cardamom : 2-3 nos.
    • Dry red chilly : 7-8 nos. (boiled & grinded)
    Spices (Dry masalas) :-
    • Black pepper powder : 1 tsp
    • Red chilly powder : 2 tbsp
    • Coriander powder : 1 tbsp
    • Turmeric powder : 1/4th tsp
    • Kasuri methi : 1 tsp
    • Garam masala : 1 tsp
    • Kitchen King Masala : 1 tsp
    • Asafoetida : 1 tsp
    • Salt : to taste
    Method:
    • Heat oil in a wok, add onions and cook until it starts to turn brown.
    • Add ginger, cashew nuts, tomatoes and salt to taste, cook until tomatoes are mushy.
    • Cool down the mixture completely, grind the mixture to form a well puree. • Soak the Kashmiri chillies in boiling water for 10 minutes.
    • Grind the soaked chillies and garlic into a fine paste, adjust the consistency by adding water.
    • Heat oil in a pan, add all vegetables and cook until soft . Keep the veggies aside.
    • Heat half oil half butter in a pan , put rai - jeera (optional), now add freshly prepared pureed gravy. Add red chilly paste, add dry masalas & mix well.
    • Add Ketchup, sugar, milk with cream, vegetable stock & cook for 5-6 minutes.
    • Mix the gravy with cooked vegetables.
    • Add water as required to adjust the consistency & cook for 6-8 minutes.
    • Finish it with some freshly chopped coriander leaves and lemon juice, mix well and serve hot with roti or paratha. It also goes well if served with plain rice or jeera rice.
