After restarting with the help of volume and power button, I am unable to get that reboot option, it's directly started. Can u help to get that option plz?

If your tablet received the Android 12 update and you decide to factory reset your tablet. It'll stay on Android 12. It won't revert back to Android 11.
Do you also recommend to take out your SD card as well if you have one inserted on the device or just delete all Google accounts before doing this? Thank you in advance :)

Yes I always remove my SD card just in case, and I would recommend removing all Google accounts. It just makes things easier.
