How to Make Fermented Porridge from Scratch the Easiest Way| No Citric Acid| Sour Porridge Recipe

- I'm showing you how to make fermented porridge from scratch with your usual uji/ porridge flour that you might be having in your house already. You will only need to add a little whole maize meal to help with the fermentation process then you will be good to go following this recipe. I'm also sharing tips for doing the same as we go along. Try this recipe and I'm certain you will enjoy your fermented uji. Enhance your hospitality for the glory of God!
INGREDIENTS:
10 tbsps uji/porridge flour - heaped.
(This is millet flour that you can also choose to evenly mix with other suitable flour ingredients as you buy. Ensure though that one of the ingredients is whole maize meal. If you are mixing the flours yourself, ensure that of the 10 tablespoons needed, one of them is whole maizemeal, about a tablespoon.
2 liters lukewarm or room temperature water (Plus a little more for the fermentation process- about 1 &½ cups of water.)
8 to 10 tbsps sugar or as preferred

I've not Fermented with sugar before. I probably need to do some research on that one. I think though sugar will help in fermentation. I think it is quick food for the microorganisms. I hope I can try though.

You added warm ,hot or cold water during fermentation
During fermentation, add lukewarm or room temperature water.

Are you using only maize flour?
No. The flour I'm using has been combined with other flours including millet flour. Usually if you buy one without maize flour, you add a little as I explained in the video to aid with the fermentation process.
