It is a good representation of your country to dine using etiquette for formal dining, usual to them. You show you are educated in the customs of others, you show confidence, which will stand you in good stead.
Since rice is a staple in India, it's perfectly acceptable to eat with a spoon. I've seen some of the best Hotel Management Professors using spoon and fork to eat rice.

We Irish are very, very, very big on Asian dishes, as our native dishes lack spices and they are bland to Asian standards. I get Asian takeaways from restaurants. Some shops here in Ireland sell Asian foods like gram flour, chickpeas, etc. I sometimes try Asian cooking at home, as I follow recipes from UA-cam.
