It may be because I saw it posted on the socials the other day, but the first piece of potential potat-art I thought of was Saturn Devouring His Son. It might not work super well, but at least you could devour... Saturn Devouring His Son
One of the somnigastronomy posts is about tomato mash potato, I feel that would lend itself well to that piece!
