The Carnival of Venice, is a folk tune popularly associated with the words "My hat, it has three corners". Many variations on the theme have been written, most notably those by Jean-Baptiste Arban, Del Staigers, Herbert L. Clarke for the cornet, trumpet, Euphonium, Francisco Tárrega and Johann Kaspar Mertz for classical guitar, and Ignace Gibsone for piano. Chopin's "Souvenir de Paganini", dedicated to the composer and violin virtuoso Niccolò Paganini, is another variation on this theme.

The tune comes from an ancient italian (Venetian) popular theme called "O mamma mamma cara". Paganini has been the first to transpose it for violin solo. The composition from Tarrega is an adaptation for guitar of Paganini's theme. Nothing to do with that "My hat, it has three corners" that you mentioned, sorry.
