Go Sarah go!!! My mom fished with me 2 days before I was born 80 years ago and then had me in the boat in a old wicker laundry basket when I was 2 weeks old. Been fishing ever since. Can't wait to see Sarah start taking people out in her boat and making videos. Just a tip, mix just a little bit of self risen cornmeal in with the flour. Best fish to eat especially fried whole but they are great if you want to try them with this recipe. Whole like you did this one and scored on the sides. Place on a baking sheet, salt and pepper to taste, Lay 2 or 3 slices of key limes on the side along with a few slices of onions. Place under broiler and cook until meat turn white (will vary just a little due to size of fish), we use to use the smaller ones this way because they were the right size for a single serving to our guest. Really easy to do and not as much mess to clean up as frying is. Being a old conch I really enjoy you videos. Keep em coming.
Cuda nasty nasty stinky fish. LOL They brought a few big yellow tail into the Jupiter Food Shack restaurant and they scored and fried them. I wish I could have order one but they sold out. That is a great restaurant if you are up in Jupiter. They was a guy named stump that got mad at the cuda and he decided to punch him. The cuda laid him wide open causes all types of nerve damage. Sad ending, a few years later Stump was trying to come off the beach from camping and it was real rough and the boat flipped and sadly Stump died of a heart attack. I did not know to afterwards Stump raced pigeons. Every time I now see flocks of racing pigeon, I think of ole Stump.
Sarah, barracuda are also one my favorite fish to catch in the Florida Keys. We use them for shark fishing like a lot of people do down in the Keys. Good luck with the new baby!

Yes, people eat fish skin on the other side of the planet. You have plenty of big fish, try snapper, bream that kind of fish in the elementary level, scale them before gut the fish, dust with flour, deep fry in peanut oil, make sure it's flat in the pen, no roll up or fold up. Low heat till it float, pick it up, let it rest a while, at the same time, turn up the fire, oil in high heat, put the skin back in again for half a minute. This is the little secret to make it as crunchy as chips. Come on, potato chips are for farmers! Fisherman eat fish skin for snacks! You can deep fry kelp leaves too, it is also crunchy and nutrition.
