I really appreciate the way to bring your real-world experience to the table and cut through the fluff and get straight to the heart of the songs and the techniques.
As far as "fake instruments"... I see both sides of it, for real, in real life. I would love to play nice acoustics where I play out. Yeah, good luck with that one. For the most part, I've not seen a good quality maintained and well tuned grand piano in a very long time. Saw a show at a theater a week ago with an amazing pianist and a vocalist doing an evening of jazz. They used the theater's acoustic grand piano. It was atrocious. Tuning was bad enough to sound like honkey-tonk in the upper registers, at least one damper was not damping (C above middle C, yeah, I picked it out), and numerous other notes were wonky. And if that's what a piano player gets to play on, is it any wonder they want their RD-2000 or something else that actually works well, something they can depend on every time, something in tune and every note working every time? Hey, I worked on 'em, tuned 'em, fixed a whole lotta stuff on 'em years ago, I know what an acoustic piano should sound and play like. And that is why I gig with my Roland RD-2000. Is it perfect? Far from it. But I know what I've got and get a lot of compliments on the sounds it makes. FWIW, after that theater gig, talking to the pianist, he asked me why I didn't fix it. My answer, "they didn't call me".
I love your thoughts on fake instruments and the other members of the band playing their "real" instruments. I have an electronic keyboard at home that I use to practice using my headphones so that my wife doesn't need to listen to me playing for hours on end. It serves its purpose, but it sure as heck isn't the same experience as playing my acoustic piano. Not even close.
I sympathize about keyboards not being the real instrument. Nothing like playing a real Yamaha or Steinway Grand or experiencing the power of a real Hammond B3 with Leslie. That being said, software VST plugins are great and better than hardware keyboards. VB3-II and Blue3 are my favorite B3 organs. Lounge Lizard for Rhodes and Wurlitzer. I'm still in search of the best piano. Native Instruments Grandeur is what I use now. I need to check out PianoTeq.

I said, "Yeah, at least he's honest!" LOL!!) Kinda sad that gigging is falling by the wayside, now that I'm finally to a point where I'm actually able to do it. Most places don't have a decent piano anymore, either, so it's keyboards. Strikin' out all over the place. (sigh) Love jazz of the 20's - 50's, really don't like R&R, country, contemporary gospel or modern styles. Could probably be making a nice paycheck if I could swallow my dislike of the styles and go more modern. Oh, well... Strike two. 😞
Appreciate the Picasso reference to his early work and technical facilities because I’ve seen a lot of his post Cubist work in situ and it’s flat and lifeless. And how many pianos can you play at the same time? Shoving 3 Sax’s in your gob is impressive but is it a gimmick? How about just the genius of Bill Evans playing one piano. Having lost a kidney I can relate to organs. I’ll give this one a miss.

Nord stage 4 and yamaha YC88 has some Killer organ patches
I just got a new piano. A Roland. Its 88 keys but only has 4 tone settings. Only tone I really miss would be a Rhodes sound.
