I'd recommend doing this after you dealt with the simple areas. Sorting by shape helps when you hit the plain areas (skies, waterbeds, grass), where there are little to no clues except for jigsaw shapes. When sorting the pieces by shape it also helps to sort them by gradient, which reduces a lot of T&E.
I've had a similar experience. There could be pieces that you have in place that are not in the right place. These pieces look like they fit, but there could be another piece that also fits. Perhaps try swapping these similar pieces and see if it helps. If they are all the same colour (e.g. sky) then it is an easy mistake to make.
I had a similar puzzle and I always save the hard part until last, because there are less pieces to deal with at the end , Usually colors are about the same at the end so I start sorting pieces or searching pieces that may fit together with innies and outies, When you have 2 pieces in a corner, figure how the innies and outies of a piece will fit. I did this and it was the key technique to finish the job, Good luck
I always do a complete sort straight into containers - usually old margarine containers, one for the edge and then the others for different colour/design elements. Then it is all done in one go and not in the way of putting the puzzle together. I see you did it this way to make it easier to film and much smaller puzzle. After I do the edge I then pick one container/element to work on for instance the green/yellow balloon (I have done a 1000pce balloons one before only on green field with similar sky) - which I line up those pieces on a tray so I can see them all in one go without shuffling pieces aside - it also means I can be meticulous about what I have tried etc. Works well for me anyway.
Step 1...never buy a puzzle where all the pieces(excluding border) are only double headed...meaning a head top and bottom like this puzzle. Step 2...only buy a quality puzzle with many different types of puzzle piece shapes. This will ensure you have a better time putting it together and won't get frustrated and bored with it quickly. Step 3...always pick out border pieces and put that together first. For a adult, a 750 piece is the ideal puzzle size to start. You can go to walmart and pick up a cork board (check your puzzle size) it has a wooden border around it and is very light weight for a very cheap price around 15 bucks. Your pieces won't slide all around and they won't fall off the edge, it can sit on your lap and you can move it any where when you are not working on it. Once your border is done always separate pieces by color..as you work your main colors down if you get many that are the same color(like sky pieces) match the pieces by shapes on your tray then you will look for where those shapes go. If you have old puzzle boxes use the lids or even a cookie sheet to separate out pieces. Never try to keep all the pieces in just one lid/box, as it makes it harder to enjoy the puzzle process. Don't put them all inside your puzzle working area, you will become overwhelmed with to many in your working space. If you learn the tips and tricks of doing puzzles it will become very relaxing and quite enjoyable. I have been doing puzzles for 50 years and even though a 5,000 piece is not that hard for me I still enjoy a 750 piece very much.

Perhaps do the 500 first, then the 759 before you tackle the 1000 piece puzzles...This will give you a chance to practice your skills on the smaller puzzles first.
