Cooking With The Chef & The Bee: Episode 1 French Onion Soup

  • Welcome to the first episode of Cooking With The Chef & The Bee. In this episode, we will be making French onion soup. I hope you enjoy.
    Recipe:
    What you will need:
    6 sweet white onions
    4 ounces, rendered duck fat
    2 cloves, garlic
    1/2 cup beef stock
    1/4 cup chicken stock
    200 mL red wine (Merlot, Bordeaux, or similar)
    100 mL Port wine
    1/2 gallon water
    8 crostinis
    4 slices cheddar cheese
    Directions:
    1. Julienne the onions.
    2. In a heavy bottom pot melt the duck fat over medium-high heat.
    3. Once the duck fat is melted add the onions to the pan and cook for approximately 15 minutes or until the onions began to take on a slight golden color.
    4. Once the onions are slightly golden, turn the heat down to medium and cook onions for another 15 minutes or until a deep nutty brown color. (BE SURE TO STIR THE ONIONS EVERY THREE MINUTES TO ENSURE THE ONIONS DON'T BURN)
    5. While the onions are caramelizing, roughly slice the garlic.
    6. Once the onions are fully caramelized, add the garlic, beef stock, chicken stock, red wine, and port wine to the onions and stir. Cook for about 15 minutes or until 1/4 of the liquid has evaporated and you can no longer taste the alcohol.
    7. While the liquid and onion mixture is simmering away, make the crostinis. (Refer to the video)
    8. Once the onion soup no longer tastes of alcohol, add 2 cups of water to begin and taste the soup to see if you need to add more water. (explanation to this is in the video).
    9. Bring soup to a boil and simmer for 10 minutes.
    10. Bowl up the soup.
    11. Place the crostinis on top of the soup followed by the cheddar cheese.
    12. Broil until the tops of the soups are golden brown and the cheese has melted.
    13. Remove from oven and serve immediately.
    This recipe will feed approximately 4-5 people.
