What I like about this is not only will these freeze, but they are *easier* to make than traditional "lasagna" with its somewhat "bougie" layering and presentation aspects. You can also adapt them to high-protein (like I am) by adding meat, or keto using lentil-pasta sheets. Stupid good idea. Bonus: they remind me of St. Louis "toasted raviolis".
