So informative and relaxing, you're awesome! I love how the figs bleed a bit and impart a lovely dark pinkish hue sporadically. Hopefully I can find some fresh figs, I used some dried ones on a brie pear pizza and it just doesn't quite do it for me. ;)

I was just checking galettes for details so I could make an apple galette - and this is so well done and informative. Thank you! I think I also may have gotten an extra tip. I notice you cut two slices and remove the second. Does that make it easier to avoid that first slice from falling apart, or am I way off base?
