Right, that's it! I'm cooking this tomorrow but change it up a bit by creating some sauce/gravy from the chicken as this is a bit too dry for me and my lot
so i made this but changed it bit. no chilli, garlic and ginger instead. left to chill for about 4 hrs, served with crispy skinned joursey royals. simply boil the potatoes in salted water, add olive oil, fresh thyme and finely chopped rosemary, added chunky onions (lightly coated in sugar) in the oven for about 10-15 mins and voila!
The mint and feta along with the green veggies is usually so typically something you would do with Lamb since it is gamey and they pair well together. Interesting to see the same combination with Chicken.
Love this recipe for simplicity. Thinking a wee pinch of paprika or something might give a nice colour? And then might serve it up with some hassleback potatoes or something?

I usually pick the leaves from the mint , I dont add the stalks also. Seems it might change the flavour of the sauce

Great recipe Jamie! Super quick and easy! Quick question, do we need to season the water for the greens?
You can add a pinch of salt but it's not vital - there's going to be plenty of flavour in the chicken, and you get salt from the feta cheese.
