We do look to see how food is cooked in your country but that doesn't mean that the food should be cooked under those conditions. He could have had a separate pail of water to wash with and he also could have used newer oil.

Too many people thinking that an authentic way of cooking is unclean. It's not! People have been cooking like this for thousands of years. People have to stop obsessing about bacteria. We naturally build a defence against it. If we try to become ultra clean, that is not good because we will not build a natural defence against bacteria.
This is titled " how to make".... not " food hygiene rules". He's brilliant, great technique and I'm gonna try it now. May use clean water and fresh oil but I bet they don't come out anywhere near as good.

To all Indians getting butthurt from the comments about hygiene please try to understand from other perspective also. I also grew up eating at such street side shops (hell I even has chai-samosa at a shop which was setup over a nullah). But it doesn't mean we should not look for improvements. I also know that fast food joints in West are filthy as well (there are numerous videos proving that, plus the GMO food they eat just makes me sad), but let's take all this with a pinch of salt :-)
Gagan Sharma Firstly, you cannot compare this Cooking to that of the west, for the most part Cooking is very clean in the west. Here in the USA 🇺🇸 the restaurants that are usually filthy are the ones owned by foreigners that recently moved here (mostly) When there are dirty restaurants, as soon as the board or health gets a report about it they immediately go and either rectify the problem or close it down . Secondly about GMO food, I don't like it and I'd rather we eat naturally grown or raised food. Slowly we are getting away from GMO foods because people are protesting about it so slowly it is changing. By the way, GMO food is not dirty. There's no reason why this guy couldn't have had a second container for water to wash up with instead of using the cooking water AND there is no reason why he couldn't use cleaner or newer oil. That has nothing to do with culture, it has to do with the guy being down right dirty and cheap.

I take it back...Water is obviously scarce, wherever that is, as demonstrated by the fact that he appears to rinse his hands in the same water that he uses for preparing the fritters. That would account for its cloudy appearance. I've eaten plenty of street food in Mexico and while it can sometimes be a gamble, looking at this video makes me feel that the odds might be a bit too far against me. If I was feeling lucky I might sample them, unless I had cause to believe the oil was rancid.
