My family once visited a maple syrup farm in Canada. They had tubes going through the entire forest transporting the sap to a building that had a giant sap boiler the size of a swimming pool. A few years later my dad took a class on collecting and boiling sap and started making his own maple syrup.
I tap the trees at my house most years. I tap 8 trees, which produce a 10L bucket of sap per day for about 4 weeks. We built a wood boiler for it that can boil it down quite fast (sap needs to be boiled down to 1/40th the volume to make syrup). The boiler needs to be fed a lot of wood, but we usually have a lot to spare in the form of fallen branches or dead trees. I'm considering building a reverse osmosis system next spring, which should be a lot more efficient. At the end of the season, we get around 60 liters of syrup most years. Labor wise, it's not worth it, that much syrup is only around $1200. But it's fun and, delicious, and it makes nice gifts.

Cause I know milk and chicken jumped up in price here in USA, where I could buy a chicken at 90¢ per lb now has become $1.10 per lb.

@@sasi5841most tree sap is toxic, only a few trees have sap that you can make syrup with and they're all deciduous trees. And for any tree the best condition for making sap is a sunny morning after a freezing cold night, which is why it's mostly done in northern latitudes. Birch tree sap is popular in Finland for example.
I use the real maple syrup. When I bake I use the real vanilla extract. I prefer 70% dark chocolate. I've tried American and Canadian maple syrup tho. Can't tell the difference.

As some who lives in the American Southwest, I have no problem finding real maple syrup at the regular supermarkets or Trader Joes and it can easily be found online.
I had it, weird flavour & sweetness, and it is nothing to be proud of. There are much better options for syrups, but since there is nothing much for Canadians to be proud of, I guess they must say it is good.
