Potato & Sweet Potato Focaccia Bread

  • Another recipe when we lived in Costa Rica, we only had homemade bread.
    Now that we are traveling around Asia, we move around and I don't always can cook in hotels or apartments.
    Potato & Sweet Potato Focaccia Bread
    Wow guys, I really don't have words, how soft, fluffy & tasty this bread turned out!
    You must try it out!
    I did this whole process in my biggest pan:
    Cook on low until softened
    4 potatoes peeled and grated
    2 Small Sweet potatoes peeled and grated
    Three cups water
    1 tbsp of onion powder
    2 tsp salt
    Take out from heat then add
    ½ cup olive oil
    3 tbsp sugar, mix and let it cool down for around 10 minutes.
    Then add
    2 tsp yeast mix again & let it activate for 5-10 minutes
    When ready add
    4 cups flour
    Mix well with a big spoon 🥄 and place inside the oven for 60 minutes to rise.
    When ready divide the dough into 2 or 3 trays.
    I did 3 because I wanted it thin, and I was giving away one to my housekeeper.
    (You can divide it into 2 trays, one Focaccia bread cut into slices and can be frozen).
    Sprinkle olive oil on top and press with your finger tips or with a fork.
    I usually massage the dough with my fingers but this time I used the fork.
    Now let it rise again for 30-40 minutes then bake at 350F -400F for about 30-40 minutes or until the top got browned.
    *I always leave the dough in the oven for resting/rise.
