Very well executed, zero shrinkage and completely uniform pastry. very skilled chef.
These skills are being lost unfortunately.
This chef shows the difference between being skilled and what I call (encyclopedia chefs) who know alot but cannot or do not know how to implement it.
did I miss something ? I didn't see him bake it, I only saw him carve it and put it on a plate.. whoever made it is an exceptional pie chef... peut etre Monsieur Le Gregg ?
Maybe I'll buy a Greggs sausage roll, don Chef's whites and slice the sausage roll pretentiously, and place it on a plate with perfect precision, maybe add a little garnish of pea flowers and dress in a wild beetroot jus... having said that, it was a fine looking pie, and one I would possibly describe as a finely decorated glazed tin baked pork pie with pistachio... or if you prefer en Francais.. tourte de porc finement décorée glacée au four avec pistache

This one I like. It's expensive food, it's gourmet, but it looks tasty and it's not being served in a silicone replica of a human head with liquid nitrogen and moon rocks. It's a shame that if he goes for two stars he'll need something like that.
