I would love for you to try making the original. It is the Palestinian national dish. All the others are shared around the Levant, like in Jordan, Lebanon, Syria and Palestine. Maglooba might be another very fun Palestinian dish to make. After cooking, you need to master the maglooba flip! I hope you can also try making Fatoosh for your salad day. It matches your vibe perfectly. Also that one is spinach when you said it was grape leaves. The meat patte is called Isfeeha. YES it's SO GOOD.
The little meat pie is called safeeha they're addicting whenever my Mom offers to cook me something i always request that! It's ground beef cooked in spices then mixed with tahini, diced tomatoes, and pomegranate molasses and put on dough and baked. It's usually topped with pine nuts and sumac but doesnt look like they did maybe a regional difference plus pine nuts are expensive😅

the sfeeha is also called la7m 3ajeen and its just ground beef with parsely and tomato and they ground that all up and make a paste and put it on the dough

Took me a minute to realise that 'grape leaves' are the same thing as 'vine leaves' (as we would call them in the UK). Funny how the UK and US seem to have different names for mediterrean veg (aubergine versus eggplant etc)!

Man .. we might have to make a detour when heading up to see family this month. We're originally from the Cleveland area. Moved to SC. Mediterranean cuisine is one of my favorites. But I can't find many places near us. We have some amazing BBQ joints and some pretty amazing Mexican food places. But only 1 Mediterranean restaurant. And they only really serve the regulars.

Za’atar is a middle eastern seasoning. Absolutely delicious and bright with lemon. You can put it on chicken kebabs and grill them. 🎉
