Unfortunately there isn't much of a fast grind, the fastest way too level up now is through always completing your daily challenges and using the exp flask they give you because after the update the exp boost is absolutely insane
@Kenkenohme pretty much, once you past the camp of the early knights and mages and their camp (where hollows pass is) you're gonna wanna continue straight and you'll see a castle with level 60 knights and mages. You're gonna have to do a bunch of quest first before you are allowed inside the building. (There's gonna be a guy camping inside a bush, he's the one who gives you the task)

You get the shield through an elite npc that carries those shields. (It's where the robot boss is at) and it's pretty much just a drop.
