    Hi Ling, I'm german. So when I came across this recipe, it was always described in restaurants as "chicken" or "beef" or whatever "with the eight treasures". So I always tried to find 8 veggies to go with the protein. And I dislike tofu (which is protein, anyways).
    So here are my (nine) veggies, that I like to use: onions, coarsly chopped, and soaked in soy sauce for some 2hrs. So they don't burn in the stir fry. Bell Pepper (most times red) , coarsly chopped. Bamboo sprouts. Carrots. Napa cabbage. (Some others should maybe blanched , beforehand.) Water chestnuts for the chrunch. Mung bean sprouts. And mushrooms: shiitake for the taste. Mu-err for chrunch.

    Hi Ling. I've never made such a huge variety in one but it might be something I could look into. I prepared a lo mein dish today. This weekend at the request of my girlfriend, she wants an almond chicken stir fry from her cook book and of course she wants yours truly to prepare it since I'm the chef of the family.     Ms Ling I can smell this while watching you cook this. Smell so good 😋. I notice sometime you listed dark soy or oyster sauce and light soy. If I omit the dark soy/oyster sauce. Do you recommend increase the light soy? Ideas for future show:You can show how to make tea egg or 5 spiced powder egg. Or recipe using dried/fresh chow fun. How about steam cake? Thank for sharing.🙏

      Actually dark soy sauce less salty than light sauce sauce. You may add a bit more light soy sauce. You read my mind. I was thinking about tea eggs. Thank you 😊

      FYI, Chinese light soy sauce is not the equivalent of American light soy sauce. They're two different products.

      Lisa Hinton Chinese light soy sauce is known as Sheng Chou, and light soy sauce here is similar but may be less salty. They are both thinner and lighter in color compared to dark soy sauce.

      About 4 to 1, water and starch. It depends on how thick you like.

    What can i use in place of tofu? I can't get it in my country. Secondly what's the slurry made of?

      A slurry to thicken sauces is two parts cold water mixed with one part starch, such as potato or corn starch. Mix a little at a time into the hot food, stirring for a couple minutes, because if you put too much, you get a giant clump of food, all stuck together, instead of a nice sauce.

      Dry or dried tofu is braised and pressed tofu with 5 spice, ready to eat 😊

      Many recipes call for soy sauce. For this recipe, you can use oyster sauce or just salt. It works but will taste a bit different.
