You can cook in that salsa adding lil pork tail ribs or chicken also chicken bouillon korr seasoning,Ideal with some white rice and some grated cotija style cheese

Owning a Pecos myself, I’ve enjoyed your experiments and have made many of the modifications you have along the way. Im REALLY looking forward to some PK videos from ya, Raleigh. I got a Pecos for Christmas this year....yanked the baffle, extended the stack....and successfully smoked a full packer last weekend to near perfection. As a guy from Arkansas whos been using a PK for most of my life, this feels full circle. Go enjoy those kids in 2023!
I'm a bad cook and it is what it is but I'm an Idealist .. That means to me what if but a huge mess for some one to clean up after . I found a mod that works on my cheep offset . I put a video up on my channel ( two mods under 10 dollars ) My fire box mod was gold for me and works well . The mod is on a lot of high end smokers that are used every day . Sweet channel and Cheers from Murrell's Inlet SC !!!

Hey John, video idea! A Pecos had the baffle removed and stack extension. The put the stock grate that came with the unit upside down about three inches away from the fire box hole with a water pan on it. They said it kept an even temp the whole cook. We would like your evaluation of it if your up to it
@@timbauer5286 - The original charcoal grate. Well, I know people used to use it as a “tuning plate”, just as you described (minus the water pan - and also the baffle removal and stack extension). I’ve not heard of someone doing it w/ the extension and removed baffle. Was that the case?
This may sound like an odd question but I was watching a video from last year and couldn’t help but notice how beautiful the landscape in the area is. Field of tobacco I believe? Anyways I was wondering what state you where from?
What’s up! Love your videos. I just picked up a Brazos and am about to modify the stack. Did you leave it with the 6” cut off or did you find the full 24” works best? Thank you for the help.
In his video linked below, he says the 22" worked best for him. I'm assuming he means 22" because he used a 24" pipe but had to cut 2" in to get past the damper. I, personally, have the Brazos and extended 16" and while it definitely helps, I'm gonna go with the 24" ua-cam.com/video/AzlDrZYJcNg/v-deo.html
Yeah it’s really up to y’all. I think the 16” was best and more proportionate but the 22” is probably easiest for everyone to use, plus there wasn’t a tremendous amount of difference in flow. 🍻

Interesting. Just to clarify; it’s the firebox cooking grate that is upside down, the cook chamber and about 3 inches away from the throat…?
