🇵🇭 FILIPINO DELICACIES: USING GLUTINOUS RICE FLOUR 🌾 (Rice Cake Flan & Budbud Moron recipe)

    Glutinous Rice Flan 🍮
    Ingredients:
    2 tbs sugar and 2 tsp water to make the caramel toppings on each of the tin/aluminum foil mold for caramel
    3 eggs
    A splash of vanilla extract
    Pinch of salt
    2 cups coconut milk
    1 can condensed milk
    2 cups glutinous flour
    Procedure:
    1. Heat the mold on top of the stove to caramelized the sugar and water till golden brown. Avoid burning it as it will taste bitter.
    2. Mixed all the rest of the ingredients until well combined and smooth.
    3. Run through the mixture into a sieve to make it smoother and creamier.
    4. Pour the mixture into the molds and steam it for around 35 to 45 minutes on medium heat just enough when the toothpick when inserted comes out clean
    5. Cook it down a bit before removing it out of the mold to a serving plate.
    You can do other flavors, like chocolate and ube.
    For Ube, you can just use ube flavored condensed milk instead of plain and you can can ube halaya .
    For Chocolate, you can add cocoa

    INGREDIENTS:
    PLAIN FLAVOR
    1 1/4 cup glutinous rice
    3/4 cup rice flour
    1/3 cup condensed milk
    1 cup coconut milk
    CHOCOLATE MORON:
    1 1/4 cup glutinous rice
    3/4 cup rice flour
    1/3 cup condensed milk
    4 tablespoons brown sugar
    1/3 cup cocoa powder
    1 1/2 cup coconut milk
    Chopped roasted pistachio or peanuts - You can pan roast any nuts and chopped it to smaller pieces.
    Banana leaves - Clean, slightly heat it over the stove and cut to your desired size.
    Kitchen strings
    Procedure:
    FOR PLAIN Flavor:
    1. Mix all ingredients in a non-stick cooking pot/pan until well combined and smooth.
    2. Cook it on medium heat while stirring constantly until the mixture forms into a dough.
    3. Set aside to cool down.
    FOR CHOCOLATE FLAVOR
    1. Repeat the same procedure as the plain flavor
    TO ASSEMBLE:
    1. Mold by hand each flavor into a log shape.
    2. Place each each flavor side by side on top of the banana leaf.
    3. Sprinkle chopped nuts on top then twist to form a two colored log
    4. Cover it with banana leaves and tie securely each ends with kitchen string.
    5. Steam for 20 to 25 minutes.
    You can serve it hot or cold. Good to pair with a good cup of coffee. Enjoy.
