  • This video covers making a homemade vegetable broth and then freeze drying it in the Harvest Right Freeze Dryer. A simple recipe with a handful of ingredients can yield a freeze dried vegetable broth powder. My recipe uses carrots, celery, mushrooms, kale, onion, parsley, garlic but you can put your own twist on it! We use this freeze dried vegetable broth powder for a base on lots and lots of stuff. You can keep it in an airtight jar on the counter or in the spice drawer and use a little here and there whenever you need it. We like to cook and rehydrate our vegetables and meats in it.

    Well, this just blew my mind! I don’t know why I didn’t think about it. I thought you were going to cook the veggies and make your broth, but this is so much better and easier! I imagine the taste is amazing, too! I’m going to have to make some of that this winter.

    Pro Tip: Mushrooms produce large amounts of Vitamin D when illuminated with an ultraviolet light or just letting them sit in the sun for a few minutes.

      Freeze drying them diced works great for adding to things, you just need to clean your freeze dryer from the smell. You can also just run a batch of food that is fine with onion taste such as rice or chili etc.

    As a thought, each veggie could be stored separately and custom mixed as needed when veggie stock is needed.

    This is a great way to have instant broth. I usually simmer veggies in water, strain, and can. This method is much better and now that I have a freeze dryer, this is my next batch. Also, all the veggie goodness is in the broth and not strained out! Thank you!

    Funny! I was thinking about this like just a few days ago but wasn't sure how to go about it but this is great. I would of added a few other herbs like sage, basil, maybe even a little mint for summer broths.... I'd love to see a fruit broth or even making your own drink mixes. I bet you could do that! I love that new vacuum sealer. I can hardly wait to see what you do next. I personally think you nailed this one! Love it!

      We have experimented with fruit drinks and rehydrating fruits with alcohol in the past. It works great!

    If you can find it, parsley root is yummy and healthy. I use my cooked and frozen in the ice cubes bullion to cook soups and add to rice pad other dishes. Thank you for your channel, you convinced my husband we need a freeze drier, we just need to wait until we move to the rental house ;-)

      @@PatsysHorses I sell them to let the machine pay for itself. In roughly 6 months, my large paid for itself and I was able to buy a medium also.
      FD candy is just a fun variety. It’s crunchy instead of chewy so even people with dental work or braces can eat chewy candies.

    I use a food processor when I have lots to chop up. I'm certainly going to try this, mixing my favorite veggies for broth. I have freeze dried the juice after juicing and then made smoothies with it later. This would also work well when making soba (ramen). I usually throw away the flavor packet and use chicken broth.

    What a great video! I already have all the powders made and I was wondering if you have a recipe for how much powder of each vegetable you use verses the actual amount of fresh vegetables you use? I know it's all about preference but I would like to start with a recipe and then tweak it. Thanks for all your insightful videos.

    I am so glad for this video. I was thinking about making some powdered broth to use in your tomato soup recipe. The broth you buy either has soy or corn syrup solids, which I do not choose to use

    I used to buy a veggie cracker and can't find it anymore so I had thought of making crackers with the powder.

    Getting one this summer, needed a good chamber vac sealer first. Doing it mainly for all the awesome powders i can make, flavored water, broths, toppings. I'm gonna have enough powders to make a witch jealous. Already bought some freeze dried raspberries n' blended up for my drinks. Gotta get used to the floating pulp, but you can not get any healthier.

    I love this and would like to add some freeze dried shredded chicken or beef into it and make other bullion types. I did a similar veggie mix to use in homemade salad dressings also. Its great.

    Thank you for this! I made vegetable broth the normal way and FD. I lost a lot because it stuck to the tray. The process took 38hrs and didn't yield a good product anyway. It's the consistency of brown sugar but it was totally dry when I pulled it out. I put it in the fridge and I will use it this week to make soup. I will give your method a try!

    You made powdered vegetables. To make a broth you would need to simmer this mix in water to blend the flavors. Then you could add whole vegetables for a vegetable soup.

      I have done some creamed soups. I would be cautious of high fat soups for long term storage.

    How much powder would you recommend per cup of water? I know you can customize to your liking but just wondering on average how much broth would 5 cups of powder make…

      1 usually do 1tbsp per cup of water

      I fd spinach and just about everything i make I add 1 tbs sprinkled on eggs to 1/4c in anything I want to hide it like meatloaf or casseroles

    So I'm needing to freeze dry about 10 lb of morels... I can't find a lot of videos or techniques about free drying mushrooms especially these kind. Should I freeze them first, and for how long in the dryer

      Sliced will work best and you should always freeze first if you can. It saves time, $ and wear and tear on your machine

    I freeze dried onions about a week ago and vacuum sealed them in jars til my mylar bags get here. Now I see my seals failed and even though still dry, I can tell a little humidity got in. Can I re freeze dry? How can I fix this?

      Certain foods will probably be fine, some may not. Onions are often stored without refrigeration when they are not freeze dried. If they look and smell fine, just re freeze dry them

    This got me thinking - could you make a freeze-dried smoothie mix? Could you even freeze dry the milk - then just add ice water to reconstitute?

      Yes you can. The only thing is milk takes a long time! I buy powder milk or use yogurt and or oatmeal. It’s so fast to make smoothies and the flavors are stronger!!!! Just delicious!!!

    Couldn’t you just use your ninja nutribullet juicer a and freeze dry the juice? Get your mix nailed down, chuck big chunks in the ninja and freeze the thick juice.

      I'm sure you could, however, the whole fruit or vegetable has so much nutrition in it that by juicing, some of the nutrition is taken away in the fiber and juice not extracted . Many times people juice to get concentrated vitamins. By freeze drying, all the fiber and nutrients are kept and concentrated to be hydrated and whatever concentration is needed. Fiber still has lots of nutrients and is good for the gut bacteria according to research done by Dr. Sarah Ballentyne of the Paleo Mom.

      Yes. We make the broth or stock. And chill in a refrigerator till the fat rises. Skim off that fat and then freeze dry the stock. Supper yummy
