It’s reliable, almost unbreakable, gets passed down generations if one isn’t given as a wedding present, easy to use and very economical to use. The pasta makers tend to squash pasta rather than stretch it and thus stretch the gluten. You need to be able to feel what you are doing and you rarely see electric pasta machines in a professional kitchen. I certainly never saw one in 24 years as a chef.
