Marvel at the traditional process of making poi, as skilled practitioners carefully pound the kalo to perfection. The diversity of kalo varieties in Hawaii is truly exceptional, with each one uniquely suited to its specific environment.
    One such variety is the lilac purple kalo, which produces the sought-after red poi. This vivid color is a result of the fermentation process, giving the poi a distinct hue. When you scrape off the skin, you'll reveal the beautiful purple shade that characterizes this particular kalo, known as kohina.

    Montagnard jarai tribe we eat taros root like potatoes and the stems , leaf we make soup so yummy 😋
