You need to wash them at least once beforehand and you need to make sure all leaves are blanched. I'd recommend instead submerging a colander into pot of water.
This is hands down a better idea than blending it down with added water and then freezing it to make ice cubes (way too messy, and will discolor plastic white trays permanently).

My concern is, are we throwing out nutrients by squeezing out the juice before freezing? Probably have to squeeze more water out after thawing before cooking-- unless making a soup then we can probably leave in the extra water from being frozen.

Ozelia Daniels if you grow you'r own food in a garden and dont want to trow all your vegetables in the trash, you can freeze them and store them all winter, until the next summer. But If you dont want that you can just go buy vegetables from the store whenever.
