  • How I make Maple and Honey Oatmeal bread inspired by King Arthur Bread Flour and their recipe of Vermont Maple and Honey Oatmeal bread. In my bread I use local Michigan Maple and Honey along with a tad less wheat flour as well as replacing the all purpose flour with bread flour.

    Written instructions for the Michigan Maple bread
    2 1/2 cups boiling water
    1 cup rolled oats
    Combine into a large mixer
    1/2 cup sugar in a smaller bowl
    Add in 4 spoonfuls of maple syrup
    Mix it all together and add it to the mixing bowl of water and oats
    1/2 tablespoon maple flavouring
    1 tablespoon Honey
    4 tablespoons softened butter
    Mix all of the ingredients together,
    Trick is to get the hot water just warm enough to add the yeast.
    1 tablespoon salt added to the bowl, you need this for the gluten strands.
    1 teaspoon cinnamon
    When it’s baby bottle warm you can continue.
    1 tablespoon yeast, which ever you prefer.
    Blend in gently
    Start with 1 cup whole wheat flour
    And 4 cups white bread flour
    You may have to add 1/2 cup more only if you need it.
    Start slow on kneading with a dough hook. ( 7 minutes ) keep in ball form only adding flour in small amounts if sticks.
    Once it’s all kneaded oil the bowl and let it sit for one hour
    After you removed it press all of the air out make as even as you can cut in half, To make two loads of bread.. and roll out the dough and pull, pinch it closed form it so it fits into the pan. Spray pans with olive oil spray place dough into pans and spray tops
    Let it rise again 1 hour.
    35 to 40 minutes Confection Bake she uses...
    Egg wash egg and water brush on top sprinkle oats on top make it so pretty.
    She adds a few ice cubes in the bottom of the oven for a bit of steam.
    NEVER CUT UNTIL Cool!

      Couple tips
      Proof ur yeast in the bowl first with the honey in baby bath temp water, takes about 5 min. Then add other stuff and continue, no babysitting needed.
      I prefer 1/4c sweetener in each loaf so I would use 1/4c honey with my (1/4c) maple syrup.
      Don’t waste time stirring syrup w/sugar. It will all stir together just fine in the bowl.
      4T is 1/4c so measure once, 1/4c of butter.
      Looks like 1/4c maple syrup for ppl who don’t see your demo. Spoons can vary in size.
      You say 1/2tsp maple extract in vid but recipe says 1/2tbsp. Which is it?
      What size pan did you use? 8x4 or 9x5? Thx

    Oh my gosh I have been making bread for 24 years and using a kitchen aid the entire time! Never did I know to only go to level 2! LOL learn something every day.. My little daughter and I are going to make this today .Know we will be praying for you and your family as we do. I was heartbroken to hear about your accident.     Actually, you can cut the bread while it is still warm. You just have to eat all of it right there on the spot to ensure optimal quality. 😀

    GOD BLESS YOU CHILD. Watching the glow as you talked at the end with how you are eating for health to be with your kids you just sparkle. You get to Florida, granny Pam here would love to share my kitchen with you. Not asking but I'm guessing the glow the warmth as you speak truth and your kids, I'm guessing GOD is in your heart as well, You just have that warmth about you, I after the new year comes around I want to try that bread, and also make muffin out of that. Warm in the morning as mini muffins sounds yummy,. I have few more surgeries so cooking is not in the cards right now in fact this is the 1st yr in 40 plus I'm not doing the holiday meals here 1 of my daughters is at her home, I am making the broc dish and my candies and couple pies with help of hubby but over a couple days due to health issues, WOW hush up Pam don't bore the poor child, well GOD BLESS and I will be following your channel from now on due to the warmth and love you express..     I’m pretty sure I was able to smell the Michigan Maple and Honey Oatmeal Bread through my iPad....I can’t wait to try this some day. I have never made a single loaf of homemade bread, but I’m going to. Hopefully soon! You have got to be one of the sweetest people I have yet to find on UA-cam.     Best bread ever. We had some for breakfast this morning. The only change we made to the recipe was to add either raisins or craisins. Oh my good the best raisin toast smothered with lemon curd. Yum. So good.

    I was just about to make this today only to find I was out of maple extract!! I even saw maple extract at the store the other day but didn't get any because I thought I had some! I can't wait to try it it sounds divine! Keeping you and your sweet babies in prayer!

    Just happened to find your video this morning. When I was a teenager, we didn’t have any money, and bought our own wheat to grind into flour, sprouted for salads, cracked for homemade cooked cereal (like Ralston, if any of you know what that is! Lol) etc., and only had a wood stove for heat. When I married, I carried on the tradition of baking bread. My honey oat recipe I have makes four loaves, and has an egg in it for each loaf. I did this all by hand, so you know that kneading the amount of dough for four loaves was a big job! I had great arm muscles in those days!😂 I had a KitchenAid appliance, but lost it in a basement flood before I could even try to use it with baking bread. We never worried about cutting a loaf while it was warm, because then you just figured that would be eaten before supper time, so no worries about moisture loss! Ha ha! Sadly, I am unable to stand long enough to bake bread anymore, due to a spinal cord tumor I had, and the subsequent loss of bone structure and muscles they had to take to remove it. I didn’t worry about tucking the ends of my loaves in when I rolled them, just pinched them off with the side of my hand, and tucked them under the loaves when I put them in the pans. Everything evens out when you bake it. Thank you for carrying on a great tradition, and taking the time to teach it to others❣️ You are a blessing. I also homeschooled, which I was grateful I could do. God bless!😊

    I’ve made bread off and on for years, but you’ve taught this old dog a few tips I’d never known! My kids always got to have a whole loaf fresh from the oven to eat for their special treat with butter - there was never any of it left, so no worries about it drying out.Looks so yummy! Thanks!

    I just found your channel last week. Unfortunately it was through learning about the horrific accident. I have said many prayers for you and your family and will continue to keep you in my prayers. The second video of yours I watched was about your wellness journey. I love your ideas and outlook.     I just made this recipe. I had to replace the maple flavoring with vanilla because that was what I had. But it turned out to be the most beautiful and delicious bread I’ve ever made! This will definitely be going into this family’s recipe book!

    Thanks for a really good bread baking lesson. I learned to bake good bread from the good folks on the old KA Baking Circle...Where I met a woman....now deceased... who became a mentor, and dear friend, She gifted me with Gracie...my KA Mixer like yours... I love her!
    My fav bread is the KA Old Fashioned Oatmeal Bread, which is a lot like your bread.
    Baking bread is an art...for sure... I love to do a little hand kneading after Gracie has done the real work, so I can feel” that the dough is perfect...
    I haven’t done a lot of bread baking since my husband of 46 years died...in January 8, 2014... But... You have inspired me to start baking bread again...
    I can tell that you really are an experienced bread baker... All the little trucks and trios.
    I want that book! I use ONLY KA Flour in my bread...

    One other great kitchen appliance that is expensive, but oh so worth it, is a Vitamix ‘blender‘. I grind my wheat and other grains in it for my bread, make ice cream in it, smoothies, soup- you name it, it can do it! Clean up is a breeze. Mine is over 20 years old now, and I’ve never had a problem with it- have only had to replace the rubber gasket at the top, which naturally dry out with age. Bought a factory second, which saved me around $100 at the time. I know they have a lot of additions you can get with it now, but just having the basic ‘blender‘ is so worth having! You’ll never regret it!😊

    When you add the oats, also add 1/4 of moistened (1/4 C. hot water to 1/4 C. corn meal - let stand to cool and plump) corn meal. The corn meal will add the most incredible crunch to the bread when toasted. I do this often on just white and wheat flour bread. You can't really taste the corn meal, it just adds a surprising texture when toasted. Thanks for posting this bread. Gotta give this a try, sounds sooooo good.

    I can only imagine how wonderful your kitchen and house smells because of that wonderful bread ❤️ Cannot wait to make it .     Found your channel this afternoon. Made this this evening, but didn't have the maple extract. Had to use vanilla instead. The bread came out wonderful! The family really enjoyed it.       I did it! I didn’t get to bed till 3 am and let me tell you, this bread was totally worth it! I should point out that I work graveyards so I’m usually awake at this ungodly hour, but it was my day off. It’s absolutely delicious, my family loved it.

    Love your out look on eating well!!! I have been on many, many diets throughout the years. It took me a long time to realise that I was setting myself up for failure! Now, I don't DIET!!!!     I made my own version of this bread (it's so versatile). I mixed KA, your's, Paul's Rule Of Thumb, and my own touches to this bread. My husband loooooves this bread. So much so that he's saved a loaf to make French toast with.

    When you think you can't do something. Think of different ways to get around it. I told my son I don' want to hear "I can't" you can we just need to do it a different way. Continued prayers for you and yours.

    This is baking in my bread machine as I comment. I didn’t have maple extract so I use vanilla, also added raisins! Smell wonderful! I can’t wait, 5 minutes to go!!!

      @@TheKneadyHomesteader I should mention too, I was out of maple flavoring, so i just left it out, i think it's just as good, just not as sweet. Hubbie wouldn't like the extra maple flavor, I don't think. thanks again, i'm learning so much from all you wonderful youtube cooks.

    Heather your voice is so soothing. I may consider making this for gifts. Can’t eat any myself (diabetes combined with extreme carb intolerance so I eat very low carb). But there isn’t anything saying I can’t make it for others! You’re such a good teacher. Oh and you’re looking amazing!

    Always love your bread videos, Heather! Will definitely make this bread! Learned something new regarding making bread in the Kitchen Aid from you. Bought a 4.5 quart Kitchen Aid a few years back. It was very disappointing because it can’t handle bread kneading. I don’t have counter space to leave it out. Carrying it out and putting it away was too much lifting. So, I knead bread with my hands instead. I get arthritis pain on my right hand at night. I make bread quite often. I really love bread making! No one else I know, makes bread.
    It is important to me to know what goes into my bread and be able to add whatever ingredients I want in them.
    You explain bread making very well, and I love watching! I hope you make some more breads for the holidays! Thanks for sharing the knowledge! Keep up the wonderful work!

    I have a big kitchen aid mixer, but have never used it for bread, because I learned from a lady that did it all by hand and I have to be able to feel the dough for it to turn out ok ... but now I have seen what it should look like in the mixer I will use my mixer.. thank you 😊💕

      Yes it’s a lot of work, when the kids were young I made Monday my bread baking day... 6 loaves a week 🥺 but am to old and tired anymore... so thanks 😊
