Wheat dough is a good source of carbohydrates. Carbohydrates present in the wheat dough encourage the growth of yeast and other saprophytic fungi which break down the carbohydrates and emit a foul smell and make the dough unfit for use

the carbohydrats persents in the wheat and some water or the fungi and microbs persent inside after a few days so wheat can be spoiled so we can not us the wheat
When the wheat dough is kept in open for few days, the formation of fungus and reproduction of yeast takes place. These fungi and yeast will become unfit for eating or for use. Since the formation of fungus takes place in the dough, it gives a foul smell.
