If you worked really hard on the story quests (particularly around the Winery) you may be able to unlock Golden Hills in Autumn which would be perfect for your harvest special! And the Halloween quest in there is amazing :D which would also set you up for unlocking Dino Valley in Winter, perfect for Christmas :)
All you have to do is go to the last one you paid for, everytine you pay you make a new homestable. For example if you pay for it in the vineyard then that is your stable forever for free! Unless you change it by going and paying at a different stable.

Horses, you need to be level 6 and a star rider at Steves farm with Justen moorland
You need to be level five plus a star rider and you will eventually get a quest with Justin Moorland at Steves farm.

When you get to lvl 6 you get a quest in Steves with Justin Moorland.
It's an advanced skill that only star riders can perform! You can become a star rider by visiting the star stable website
