Simply older versions of what they once were thirty or so years ago. It's called aging...lol. I personally think they all look great for their ages.
It's not supposed to be mocking them, it's just a for fun comparison between how they looked near the start of their careers and now. I love watching these kinds of things because a lot of the time I permanently imagine actors as they looked in my most liked movie of theirs, despite knowing that they are real people who probably look different now (Schwarzenegger will always look like John Matrix in my mind). These videos mostly remind me of how I enjoyed the movie, and also give me a sense of nostalgia when I see how much time must have passed since the actor made the movie.
