Festive seasons and parties are inseparable. This festive season, Chef Ruchi Bharani brings you an easy to cook, deliciously filling paneer maincourse recipe called paneer steak. So spark up your Christmas party with the goodness of paneer and veggies.
Ingredients:
For paneer filing:
1 tbsp olive oil
2 tbsp celery (chopped)
1/2 tsp garlic paste
2-3 tbsp chopped onion
1 tbsp red chilli sauce
Italian pizza seasoning
salt to taste
500g paneer cut into squares
bread crumbs
Salt to taste
1/4 tsp garlic paste
1 small onion, finely chopped
2 tbsp chilli sauce
3 tbsp all purpose flour (maida)
3 tbsp cornflour
1 tbsp cheese
1 tbsp Italian pizza seasoning
For Paprika sauce-
1 capsicum, cut lengthwise
2 tbsp tomato sauce
2 tbsp cheese
2 cups milk
2-3 tbsp red chilli flakes
1 1/2 tbsp butter
For the veggies-
200g broccoli
1 carrot
1 zucchini
1 small onion, cut lengthwise
4 baby corn, sliced
Mushrooms, sliced
1 tbsp celery, finely chopped
1/2 tsp garlic paste
Few basil leaves
1/2 red bell pepper
1 tbsp olive oil
Method:
To make the paneer filling:
- In a pan, add the olive oil, garlic paste, finely chopped celery and finely chopped onion and saute it for a few seconds.
- Add the red chilli sauce and turn off the flame.
- Add the Italian pizza seasoning and salt and saute. Remove it in a bowl and let it cool down.
To make the veggies:
- In the same pan, heat olive oil.
- Once the oil is hot, add the garlic paste, fresh celery, onion, bell pepper, baby corn and broccoli and cook them for a few minutes.
- Add salt, basil leaves, Italian pizza seasoning / mixed herbs, red chilli flakes and the mushrooms and cover the pan with a lid.
- Open the lid and add the ketchup, thinly sliced zucchini and carrot, mix well and let them cook for a minute.
- Add salt. Once the zucchini and carrot are tender, get the pan off the flame. Remove the veggies in a plate and let them cool down.
To make the sauce:
- In 2 cups of milk, add the cornflour and mix well.
- In a saucepan, heat little butter.
- Once the butter melts, add the capsicum and garlic paste and stir.
- Add the milk mixed with cornflour and keep stirring. Let it cook until the sauce becomes thick.
- Once the sauce thickens, turn off the flame.
- Add the basil leaves, grated cheese, salt, red chilli flakes and ketchup and stir well.
To make the batter:
- In a bowl, add the all purpose flour and the cornflour.
- Add salt, pepper and water and mix well.
To make paneer steak:
- Take two big square-sized slices of paneer.
- Mix the onion filling with little grated cheese and layer it on the paneer. Cover it with the other paneer piece.
- Dip the paneer in the batter and then coat it with the bread crumbs. Make sure it is well sealed from all sides.
- Flash fry the paneer.
To plate:
- Spread little sauce on the plate.
- Place the paneer slab on the sauce.
- Top it up with the cooked veggies. Garnish it with a fresh basil leaf.

Just a suggestion. You could've slit the paneer in the middle and then filled the onion masala. That way it would've been less messy :)

it could be grilled instead of frying it just cover the paneer with some fresh eggs then put in the oven for a while and it will be so delicious
This is a vegetarian channel and yes eggs is considered "non vegetarian" here, So we cant use eggs here as it will defeat the whole purpose of this video
