I make a sweet potato chili that is easy. You brown ground beef, add spices add some tomato paste, stir together. Add a can of diced tomatoes (I use the ones with green chili in it). Then add a diced sweet potato that you have cooked through (I start this out first and it cooks while I’m doing the ground beef). When the sweet potato is cooked I add it to the beef mixture and cook together. You can serve it with cheddar cheese, sour cream, onions, green onions or whatever you want. The spices I use are chili pepper, cumin, red pepper flakes, salt, pepper, cayenne. Also... you inspired me to learn to carve a spoon so I got a kit for Christmas! Stay safe and keep camping! Brian, try grilling your purple onions. Cut thick, so that circles stay together. Put on grill, or in your cast iron pan. Slab of butter on top. Grill until golden, flip and grill other side. YUMMMYYYY!!!!

Hi Brian just watched Kelly's video now I'm watching yours a favorite recipe for camp is as follows. Slice up two to three potatoes cook them about halfway then add peppers onions and a hot dog or two cut up. Continue cooking till the potatoes are done and seasoned well. In a cup, scramble up two eggs with a fork or whisk pour that over the potatoes, put a lid on till the egg Cooks then of course mix it all up sprinkle cheddar or American or whatever kind of cheese you want on top and put the lid back on and steam till the cheese melts. That is an excellent camp meal and tastes so good out in the wild.
We just purchased a Fox Outfitters grill like the one you use. We're very happy with it! It's the sturdiest small portable grill we've found. We got the larger one, because the small one was out of stock at the time. Thank you, Brian.
Lol! I also bought one ( I got the small one) and broke it in on my trip to Quartzsite. I bought springs and installed them as well to hold the grill when flipping. Hope Brian is getting some goodies from them!
Love green sauce for my chicken enchiladas. Flour tortillas, chicken, onion, black beans if want, cheese and green sauce all mixed. Then green sauce and cheese on top. Can definitely make in a skillet.
An easy good meal is to slice up any meat chicken, beef, or pork into half inch slices. Also cut up a green pepper into half inch slices as well as an onion. First fry up the onion and green pepper until they start to get soft then throw in the meat until it is done and serve everything over rice. It's especially good if you use a homemade teriyaki sauce: mix soy sauce, brown sugar diced onion, diced garlic, and a dash of vinegar. Let the meat soak in it for at least a couple hours.
You need to find some good green Chile to have with your eggs and sweat that cold out! Nice tour of the national forest.. take care and hope you get well!

Hi Brian. We love your vids and watch every one. I watched here where you used a metal plate ro cover your pan, then VIOLA! 😯 You flipped it over and it became your plate! Ingenious!!! This way your food stays warmer longer and there's less dishes to wash. Thank you so much for showing us that. Now, I just need to find those plates.
Looks like you took that log out of the water trough. The reason it was there is so that smaller animals can climb out if they happen to fall in there. Just fyi.

Hey Brian, you asked for recipes. Here's one of our favorites - Easy Chili: 1 lbs of lean sirloin or your favorite meat (or not). I chose sirloin over hamburger because it's more lean. 11oz can of chili beans 11oz can of pinto beans 11oz can of tomato sauce 24oz jar of Pace Picante Sauce (spiciness to your taste) Cube the sirloin to 1/4" cubes trimming off fat and any gristle. Sear in a hot pot Add chili and pinto beans (be sure to rinse the pinto beans unless you want to reenact a scene in Blazing Saddles) Add tomato and picante sauce Let simmer on low heat (so it has a light boil) with the lid off for 1 hour or more. Occasionally stir. Enjoy!!

I lost my Brother suddenly in 2012 miss him very much, lost my Mom Dec 4th 2021, my half Sister on Dec 12th 2021 then my ex Son in law on January 9th 2022 . My Dad also passed in 2008... i have my children and Grandchildren... sorry about your loss

Great video. Guessing that stick that was in that water trough is to help small animals get out once the water is running again. Like that you can use your bike to reach out an explore more once camp is setup up.
I'm using an old timey method for colds . Updated with a zinc tablet. Twice a day scrape the white fibers from orange peals. Lemon and grapefruit works too. The white fibers on the inside of the peal contains quinine. For each scraping add one zinc tablet. Keeps a cold in check. Helps your body fight the cold. Chicken soup and rest helps too. Nice camp.
Your wooden spoons are beautiful. I find when there is a slight curve - the bowl would be slightly lower than the handle - it is more ergonomic, more comfy to use. Your videos are lovely, peaceful and tasteful. Thanks.

I sit down to watch some UA-cam and I see Brian has a new video. I decide to watch it. By the end I am so hungry I want everything he made. I am trying to lose weight, Brian. But to give you credit it looked to be good food for that too.
Although you've said you could go back to a standard van, it looks to me like the box van is the perfect solution to your chosen lifestyle. I believe Dreamside Out was a bit of an inspiration for you in that regard. If I get the chance to pick one up at a decent price, I think I will. I'm strategizing for retirement, and I do appreciate all the inspiration you provide. Hope Kelly is feeling better!
There are so many lovely spots to camp in those woods! The snowflake/ice shots were epic. Thank you for those!! One of my favorite breakfast dishes is made by TheDanVan. Scrambled eggs with green peppers, garlic and onion is chopped finely. Throw those in a tortilla with some left over brisket from the night before and a little cheese with a side of fried taters Vicky VanGo style. . I call that breakfast!! I love the ending with Disabled Overland.

Those grazing fees are used to pay for camp and road maintenance. In winter, the ranchers usually bring the cattle to lower altitude feed lots, so there is no worry about the troughs freezing over.

Those grazing fees are used to pay for camp and road maintenance. In winter, the ranchers usually bring the cattle to lower altitude feed lots, so there is no worry about the troughs freezing over.

You need to head up to Pinetop and enjoy the national forest there. The forest is amazing and dense. Loads of elk, deer, bear. It is amazing.
