Mom's Recipe: Braised Red Cabbage with Smokey Pancetta

    Today I am making my braised red cabbage with smokey pancetta. Actually, this is my mom’s recipe and she always uses regular cabbage, but I use whichever kind of cabbage I find fresh at the supermarket or on the market.
    Also, red cabbage is super healthy, and even healthier than regular cabbage because it has lots of anthocyanin that gives it its specific color.
    I love, love and yes, love pancetta, and I urge you to always buy the one that has a seductive and mouthwatering flavor, nothing beats that. I always nibble a few pieces of pancetta while cutting it for this dish.
    I you want a vegetarian or vegan version of this dish, simply swap pancetta with smoked powdered paprika or one of my favorite Spanish spices, pimenton de la vera.
    You will need:
    1 red cabbage
    1 red or regular onion, mid sized
    2 cloves of garlic
    A dash or two of sunflower oil for frying
    A nice pinch of salt
    Olive oil for seasoning after cooking.
