If I am using Matter over Wi-Fi for all of my devices, will each and every device take up an available Wi-Fi slot on the Wi-Fi network? Hence, will I be able to see each and every matter/Wi-Fi device via the Wi-Fi router. Some Wi-Fi routers have a limit to how many Wi-Fi devices can be connected to it.
Or is it the case that the the Wi-Fi router only knows about the Matter controller on the network and not every single Matter device?

I don't understand what makes matter over-Wi-Fi devices interoperable if we still need a hub according to the ecosystem. For example, if we use Google Home, we need a google home hub, if we use a Apple homekit then we need an Apple hub and so on for Amazon. There should not be any requirement of hub if matter is just an application layer on top of other protocols. We understand for matter over thread a border router is is required to connected thread network to external internal IP network but for matter of Wi-Fi, it does not make sense at all use an external hub.

I think why they still need a hub because your app (SmartThings, HomeKit, etc) will send command into their own server. And then their server will send to their Hub to execute which device to execute the commands. I think the mobile App and Hub will hold their own customer (since you and me have different preferences. ex: I like to use HomeKit, so i don't need install SmartThings app). But every products now have standard for communicating from Hub to smart home end-device through Matter protocols. So the company just need update their own firmware/software to implement Matter protocols. I the summary, it's not fully interoperable by network. BUT interoperable between app through Hub. The key of Matter protocol is Hub. Disclaimer, this is my own opinion. Right or wrong is based on your perception. :)
